To make 8 whirls….
200g vegan butter (I always use @naturli)
2 tsp vanilla essence
50g icing sugar
200g plain flour
2 tsp cornflour
1/2 tsp baking powder
50g vegan butter
80g icing sugar
1 tsp vanilla essence
Preheat the oven to 180c/ gas 4.
Cream the butter in a bowl, add the vanilla essence. Sieve the icing sugar, then add to the butter.
Sieve the flour, cornflour & baking powder, then add to the butter & icing sugar.
Fold all together. Once all blended add to a piping bag with a wide nozzle.
On a lined baking tray pipe 16 rounds, about 2 inches wide. ( i am no piping expert so don’t worry about being to fussy, they spread slightly & will look great) leave about an inch gap between each biscuit to spread whilst cooking.
Place in the oven for 12 minutes.
Whilst the biscuits are cooking cream the butter for the filling, add sieved icing sugar & vanilla essence.
When the biscuits are cooked cool on a wired rack.
Once cooled on half the biscuits (bottom side/flat side) spread a teaspoon of jam, on the other half spread a teaspoon of butter cream. Sandwich together, dust with icing sugar, & enjoy.
Store in a airtight container in a cool place.
