This is is a beautiful refreshing summer salad. Its really simple, bursting with flavours, full of goodness. Spinach is a daily favourite of mine, its nutrient dense, full of potassium, magnesium, B6, vitamin A C and K. Grapes bost many antioxidant benefits, and boost the immune system. Avocados are an important source of heart healthy monounsaturated fatty acids. Walnuts provide essential omega 3’s. Drizzled in a apple cider vinegar and lemon dressing, adding vitamin C and gut flora enhancing benefits.

Ingredients:

2 cups of spinach leaves

1/2 cup of grapes

1/2 avocado

1/4 cup of chopped walnuts

1 desert spoon of mixed seeds (optional)

1 tablespoon of Apple cider vinegar (use apple cider vinegar containing the mother)

1 tablespoon olive/rapseed oil

juice of 1/2 lemon

1/2 teaspoon of wholegrain mustard

Wash the spinach and grapes, chop the avocado, toss together in a bowl. Transfer to a serving dish, sprinkle with chopped walnuts and mixed seeds if desired. In a separate bowl place the vinegar, oil, lemon and mustard, I like to season with a little salt and pepper, but this is optional. Whisk all together and drizzle over salad.
