DONER SHITAKE KEBAB
Who remembers going out?!? drinking one too many beers, stopping via the kebab shop home?!?!.... distant memories!
Well here is my vegan doner kebab, bring the memories home. Healthier, easier, tastier.
Shitake mushrooms are a fantastic meat alternative due to their texture. You could use any mushrooms, but I reccomend the almighty shitake 🍄......
To serve 2.....
2 flat turkish breads/ pita bread
125g shitake mushrooms
1 tbsp coconut oil
1 tsp garlic powder
1 tsp ground cumin
1 tsp ground coriander
1 tsp smoked paprika
1/2 tsp onion powder
1/2 tsp salt
Pinch fresh cracked pepper
2 tbsp vegan mayonnaise
1 garlic clove, minced
Siracha sauce (chilli sauce)
Handful shredded lettuce
I tomato sliced
1/4 onion sliced
Begin by slicing the mushrooms. Shitakes are odd shapes, ive sliced them horizontally (see pic) rather than the traditional vertical way we slice mushrooms.
Place all the spices into a small bowl.
Mix your mayonnaise with the minced garlic, & set aside.
In a saucepan heat the oil, when hot add the mushrooms, followed by spices. Cook for around 10 minutes, stirring occasionally. Let the spices get crispy on the edges of the mushrooms.
In a separate saucepan or griddle heat gently on low your flat breads/pita, for a couple of minutes.
Once warm spread the garlic mayonnaise across the bread, add lettuce, tomatoes, onions, followed by mushrooms. Drizzle Siracha on top.
Wrap the breads over if using flat breads.
Pour yourself a beer & enjoy! 😋👌 serve for lunch, add pickles, load with potato wedges or sweet potato fries for dinner.
